In
▶ Crete,
the vintage starts mid August and ends in the beginning of October, depending on the location and on the type of grape.
During this period, the farmers from the area take their grapes to Nektarios where they get pressed mechanically (the grapes, not the farmers). The old method of scrunching the grapes bare-foot exists in Crete up to the present day, but only in folkloric presentations. |

The grape juice is being filled in barrels, and a sample is given to the microbiologic lab in the city of
▶ Rethymnon
for examination.
There they also determine which types of wine yeast are to be added, and how much. Afterwards, the farmer takes the barrels with his grape juice home, and rolls them to an appropriate place to let fermentation happen. |

Same as all other farmers from the area, Nektarios has some private vineyards.
So he produces both wine and Raki for himself as well, and a part of it he sells straight ex factory. For fermentation, he takes his wine barrels to a cellar which is towards the sea side under his house in ▶ Stavromenos: There, the temperature is steady enough. |
