The Raki Distillery
The Raki is a Cretan brandy made from rape, similar to the Italian Grappa. The correct name actually is Tsikoudiá as "Tsikoudi" is the Cretan word for rape. "Raki" is however the Turkish word for brandy, but it is easier to be pronounced. |

When the farmer from the neighbourhood comes to take his barrels with grape juice home, he can leave the rape at Nektarios' to have it fermented.
The fermented rape will then be distilled in the Rakokásano, and afterwards the farmer can collect his accomplished Raki. Before distillation, they frequently add flavours such as citron fruits or saffron, according just to personal taste. |

This happens immediately before the distillation process starts, and not at all earlier during the fermentation process.
That's one more reason why the distillery needs complete cleaning after every distillation, in order not to affect the flavour of the next one. White wine rape incidentally produces an initial concentration of up to |

The Raki campaign runs approx. from the Same as all other farmers from the area, Nektarios has some private vineyards. So he produces both wine and Raki for himself as well, and a part of it he sells straight ex factory. |
